Understanding Wagyu Grading

Japanese Wagyu Grading (JMGA)

In Japan, Wagyu is graded by the Japanese Meat Grading Association (JMGA) using two criteria:

1. Yield Grade (A–C)
Indicates usable meat yield.

2. Quality Grade (1–5)
Evaluates:

  • Marbling
  • Meat color
  • Fat quality
  • Firmness and texture

The highest grade, A5, reflects top yield and peak quality.

Wagyu Grading in the United States

In the U.S., beef is graded by the USDA based on:
